Hey friends! I’m stopping by to say hello and share some things from the last week(ish). Classes are over for the summer and I’m back to work after a hiatus during the busyness of the school year.
Speaking of work, we get the cutest cups in all the land.
Hand-decorated Disney style by my dad/boss. I’m a fan.
And speaking of summer, even though it’s not technically summer, the forecast for the week seems to think so.
Well, I’ve sort of branched out from oatmeal. I baked up a loaf of pumpkin banana bread (yay for pumpkin in May!) and it’s made with oat flour. But it’s not stovetop oats, so I’d call it a change.
Get the recipe from Chocolate Covered Katie here. I have her cookbook, which includes a few doughnut recipes. That combined with the fact that I just got doughnut pans for my birthday means doughnuts will likely be happening soon. I’m not mad about it.
My go-to Psalm as of late: Psalm 43.
As you may know by now, I love a huge salad. ESPECIALLY in the summer. This one had a creamy mustardy dressing, greens, cucumber, tomato, chicken, bacon, and avocado. With lemon pepper seasoning from Trader Joe’s ground on top, because, obviously. That stuff is my jam.
I also enjoyed a lovely Saturday evening at a coffee shop with a friend while we studied French (I’m prepping for a test coming up later this summer). Too late in the day for coffee (for me), so berry tea it was.
And see that book? It’s by my favorite author, Emily P. Freeman, who I know I mention all the time. That particular book is called ‘Graceful’ and it changed my life. No joke.
This week continues in the “back to work” theme. Hope you all are enjoying your week!
P.S. I have a bunch of baking to do for a party on Sunday. I’m making blondies and brownies in mini muffin tins and I’m going to arrange them checkerboard style. Any favorite brownie/blondie recipes I should give a whirl? Would love to hear your suggestions!
