This chocolate covered cherry smoothie is creamy, sweet, and has the prettiest rosy hue. It’s the perfect way to use up an abundance of summer cherries, fresh or frozen.
My grandparents have cherry trees in their backyard. We always know summer’s in full swing when the first ripe cherry is picked and eaten by a lucky family member. Their trees produce enough cherries to have some leftover to freeze or dry, so I guess we’re all lucky–bags full of dried cherries in the pantry for cookies and trail mix, and bags full of frozen cherries lining the freezer for smoothies.
This will come as no surprise to you: chocolate is my fave cherry pairing. If you really want to go all out, I’d recommend topping your smoothie with a chocolate-dipped cherry or two. Maybe add a little tiki umbrella. Festive. For summer. But there’s no need for that. You can even leave out the cocoa powder if you so desire, and have a plain vanilla sort of cherry smoothie. Whatever you feel like.
Though I’m not one to leave chocolate out of anything, I will say this: the plain cherry smoothie yields a princess-pink beverage. So if you’re in the mood for something pink, eat a piece of chocolate on the side. Or sprinkle chocolate shavings on top. There’s an idea. I use yogurt as the base for this smoothie. But you could easily sub cottage cheese, tofu, ice cream…the choice is yours. You may have to adjust sweeteners accordingly. You can do it. You’re a pro taste-tester. I believe in you.
It may not be summer yet, but I’m ready for a plethora of fresh cherries. Until then, though, I’ll be content to use up the last of our frozen cherries in this chocolate covered cherry smoothie.
