Hey there. I’m stopping by on this lovely Tuesday to tell you lovely folks about my eats of the week. (Spoiler: if you couldn’t tell by the title of this post, my meals were pretty much all breakfast foods.)
I tend to go through phases as to what I eat. I’ve had smoothie phases and salad phases and sandwich phases and soup phases and pancake phases. Oh, and let’s not forget about my muffin in a mug phase. Do you go through food phases? Right now, I’m definitely on an oatmeal kick. I’ve had oats in some form for breakfast for I don’t know how many days in a row now.
Wait, I lied. I didn’t yesterday. I made a shake because I was rushing out the door to church and needed something I could down while driving. Sometimes, you just can’t sit down for the whole meal experience. Keeping it real.
But aside from yesterday, oatmeal has taken up a major role in my breakfast food life. And other breakfast foods have become my staples for all my other meals. I don’t hate it.
So, without further adieu, some of my eats of the week!
Or more accurately, an incomplete compilation of my eats in no particular order. 😉
A batch of my pro-zoats, minus the cocoa powder, plus grated carrot, pumpkin, and banana, topped with blueberries, banana slices, cashew milk, and cinnamon, served with a side of tea.
Turkey and veggie omelet with my current fave coffee (insert heart eyes emoji, also, recipe–if you can even call it that–to follow).
Pre-dinner snack because I was going to be hangry if I waited till dinner: chocolate avocado smoothie. Look how thick and creamy that is! <3
Another day, another bowl of oatmeal. This one is topped with pears and blackberries, like I mentioned in this post.
Oh hai. You’re not breakfast food.
Lunch: My favorite throw-together salad. It uses a simple, creamy dressing made with from scratch mayonnaise. Recipes for mayonnaise, dressing, and salad coming soon!
Recipe testing cookies! Almond butter chocolate cookies, to be exact. I threw in some zucchini, but I think I’ll leave it out next time. It added a little too much moisture, even with squeezing out the water. Still tasted good, just not as cookie-textured as I’d like.
Post-dinner snack: avocado smoothie bowl topped with a few of the above cookies, peanut butter, coconut oil, Greek yogurt, and hemp hearts.
One last bowl of oats, this one topped with blueberries, cottage cheese, and cinnamon. Nom.
And now, my current favorite way to drink coffee, as promised.
I add a shot of espresso and 8 oz of boiling water to my blender because we have an espresso machine, and yes, I know I’m spoiled. You can use whatever hot coffee you’d like.
Then I add 1/2 Tbsp of coconut oil, 1/2 Tbsp of butter, 2 tsp cocoa powder, a few (or way more than a few) shakes of cinnamon, a dash of vanilla extract, and a tiny pinch of sea salt.
Blend until nice and frothy!
