Hi friends! I haven’t done a meals lately post in a little while and thought I’d share. The weather has been warming up here and so, in addition to the pics below, I’ve been eating tons of frozen fruit. I was also sick this weekend and when I’m sick, I ALWAYS crave frozen fruit. So think bowls of frozen blueberries, raspberries, cherries, pineapple, you name it. And as much as I love frozen fruit, I”m excited that it’ll be time for fresh berries soon.
So, without further adieu, some meals lately:
Yeah, oats again. Topped with sliced banana and strawberries.
Salad. Leftover fajita chicken. Rice. Cheese. Sour cream. Salsa. Peppers and onions. Guac. The good stuff.
A piece of sourdough toast, one half with buttah and the other with peanut butter and homemade strawberry freezer jam. What is it about peanut butter and jam on toast that tastes simultaneously like summer and childhood?
Lettuce, pinto beans, sautéed carrots all topped with sour cream and salsa. Plus kombucha, plus that unpictured frozen pineapple I was telling you about.
Chocolate almond milk on a warm day. Blend a cup of almond milk, 2 tsp–1 Tbsp cocoa powder, a tiny pinch of sea salt, and maple syrup to taste. Pour over ice.
Leftover pan-seared chicken, tomato, cucumber, red bell pepper, and avocado all tossed in lemon juice, olive oil, salt, and pepper. Followed by a couple of pieces of sourdough for carbzzzz.
Had this twice this last weekend. Mint chocolate chip is my fave.
