Give me all the avocado greek yogurt salad dressing.
It’s deliciously creamy, but light and summery in the best way. Ya feel me?
This is my current favorite salad dressing, for its beautiful green hue almost as much as its flavor and consistency. It’s super easy to throw together (major win in my book) and I’ve been using it to dress just about every salad I eat. Which, in the summer, is a lot of salads.
If you’re not feeling a salad, I bet you could make it a little thicker and use it as a spread on a sandwich or wrap. Or as a sauce for tacos. Who’s never not feeling a taco?
But let’s put tacos on hold for the moment and talk ingredients. There are three of them. Three! I don’t count salt, pepper, or water, because obviously. Really, I don’t know if you can call this a recipe it’s so easy.
There are a few methods for making the salad dressing. If you’re like me, you go way out of your way to use as few dishes as possible. Even if in the long haul, it means more work. If you go that route, you can use a fork to mash the avocado and mix it all together. If you want to ensure the smoothest dressing possible, go ahead and break out your blender or immersion blender.
The recipe doesn’t make a huge amount of dressing, so double/triple/whatever you need to do to feed your tribe.
Once you’ve made the basic dressing, you can dress it up (pun intended) any way you like. I like it with lemon pepper seasoning ground in, but you do you.
But enough rambling. Let’s keep this post short and simple, like this recipe. So here ya go: avocado greek yogurt salad dressing!
- 1/2 avocado
- 2 Tbsp greek yogurt
- 2 Tbsp vinegar* or lemon/lime juice
- water to thin
- salt & pepper
- any other herbs/seasonings you'd like!
- Combine all ingredients except water in bowl or jar. Mash with a fork. Add in water 1 Tbsp at a time until the dressing is the consistency you want. (You can also use your blender or immersion blender.)
- If I go the vinegar route, I usually use apple cider vinegar or white wine vinegar.
Don’t mix it up with your matcha latte!
